(Kohlrabi, Purple Greens) We finally were able to get a photo of the
purple kohlrabi greens, which we purchased at Touch of Dutch Farm in Richland
Center, Wisconsin, but they didn't have the bulb attached. These greens are very
tasty. We cooked them with brown rice, onions, lemon, pepper, and spearmint,
with the coarsely diced bulbs that were purchased separately. We could not find
any specific nutritional information for purple kohlrabi greens other than
purple kohlrabi is high in vitamin C and is a good source of both fiber and
potassium. The nutrient-dense stem also contains high amounts of phosphorus,
magnesium, calcium, and iron. The purple pigment in the skin of purple kohlrabi
comes from the presence of anthocyanins, which are antioxidants that can help
protect and boost the immune system.
