Kohlrabi, Purple Greens

Kohlrabi, Purple Greens
(Kohlrabi, Purple Greens) We finally were able to get a photo of the purple kohlrabi greens, which we purchased at Touch of Dutch Farm in Richland Center, Wisconsin, but they didn't have the bulb attached. These greens are very tasty. We cooked them with brown rice, onions, lemon, pepper, and spearmint, with the coarsely diced bulbs that were purchased separately. We could not find any specific nutritional information for purple kohlrabi greens other than purple kohlrabi is high in vitamin C and is a good source of both fiber and potassium. The nutrient-dense stem also contains high amounts of phosphorus, magnesium, calcium, and iron. The purple pigment in the skin of purple kohlrabi comes from the presence of anthocyanins, which are antioxidants that can help protect and boost the immune system.

Vegan FlagThe above recipe is in keeping with God's creation intent (Genesis 1:29-31): 'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so. God saw all that he had made, and it was very good.' (NIV) Let no animal suffer or die that we may live!
