Kale rice (Chinese style) is a delightful no-fry fried rice vegan recipe that will delight both family and friends. This vegan recipe takes about 30 minutes to prepare and about 30 minutes to cook in a microwave oven or in a wok. It will serve 6-8 adults as a main meal with a salad. We cook this recipe in either our wok or in a large covered baking dish in our microwave oven. It is also great for leftovers and can be stored in the refrigerator for a few days in the covered baking dish.
We begin by placing the rice pot on the stovetop with 4 cups of water and turning the heat to high until the water boils.
While the water is heating, we measure out the rice, and wash the fresh kale, celery, and peel the onions, garlic, and carrots. Slice the carrots, dice the celery and onions, crush the garlic, and place in the covered dish or wok (if cooking in a wok, stir-fry in a little water).
When the rice water begins to boil, add the rice, cover, and lower the heat to simmer until all the water is absorbed into the rice.
Pre-cook the carrots, garlic and onions until the onions begin to get semi-translucent.
If you are using fresh kale, cut into bite sized pieces, or coarsely shread in a food processor.
Add the kale, ginger, and hot pepper to the pre-cooked veggies and cook until the kale is thoroughly defrosted and tender, mixing as necessary to ensure uniform cooking.
In the container of a high-speed blender, place 1 cup of water, and add the soy sauce or Bragg Aminos, smoke flavor, seseme seeds, dates, and cornstarch. Cover the container and run the blender at high speed until all the ingredients are creamy smooth.
When the veggies are cooked, add the contents of the blender and mix well, and then add the rice, and thoroughly mix into the veggies.
Serve and enjoy.
