Kale and Cabbage Stew - Kenyan Style

Ingredients

1 Onion, medium size, chopped
1 cup Tomatoes, fresh or canned, chopped
1/4 cup Peppers, green bell, chopped
2 lbs. Kale, chopped
1 lb. Cabbage, green, chopped
Hot Red Pepper Sauce (optional)
Salt (optional)

Preparation

We served kale and cabbage stew over a bed of brown and wild rice, which we suggest you begin to cook just before you start to prepare the stew.  We used 1-1/2 cups of brown rice and 1/2 cup of wild rice cooked in 4 cups of water.  This stew can also be served with plain brown rice, in which case we suggest cooking 2 cups of brown rice in 4 cups of water.

Instead of hand chopping all the veggies, they can be shredded in a food processor, which we used for this recipe.

 

Wash and peel the onion. Wash and clean the kale, cabbage, and green pepper.  Begin by shredding or chopping the onions and green pepper.  Place in a large covered ceramic or glass baking dish, if cooking in a microwave oven, or in a wok.  If you desire to spice up the recipe with a little hot sauce, add it now, and mix well.  Cook until the onions begin to become translucent.  If cooking in a wok, saut� in a little water.

When the onions are cooked, chop or shred the kale and cabbage and add to the baking dish or wok.  Add the tomatoes, mix well, and cook until the kale and cabbage are tender, mixing frequently.  If cooking in a wok, stir-fry the kale and cabbage until tender.  If you use salt, add just before serving, or allow each person to add their own salt.  (To enlarge the photo of the kale and cabbage stew during the cooking process, click on the photo or link)

Serve over a bed of brown rice and enjoy.
