Corn Oven Cakes (No-Fry Pancakes)


1 � cups Spelt or Whole Wheat Flour
� cup Oat Flour (ground rolled oats)
� tsp Nutmeg
1 � tsp Baking Soda
1 lb Corn Kernels, frozen
2 Bananas, ripe
1 C (approximate) Apple Juice

Combine spelt and oat flour in a bowl. Mix approximately 1 cup of the frozen corn into the flour. Add nutmeg and baking soda. Mix well.

In a blender container, place � C of apple juice, and 2 peeled, ripe bananas. Cover, and blend at high speed until the apple juice and bananas are smooth. 

Uncover the blender container and add the remainder of the corn.  Cover the blender container and run at low to medium speed until all the corn is finely chopped.

Pour the blended ingredients into the flour mixture and mix well. If more liquid is needed, rinse out blender container with a little apple juice and pour into mixture. Mix all ingredients together. This batter should be on the stiff side.

Spoon onto a non-stick or lightly oiled baking sheet. Bake at 350 degrees F for approximately � hour.

When the oven cakes are finished baking, serve on a plate with some fruit garnish (optional).  We garnished our plate with kiwi slices.
