Vegetable Lo Mein (Chinese Style Pasta) with Brown Rice Spaghetti, Cabbage, Carrots, Celery, Green Beans, and Onions is a delicious vegan recipe that will serve about 8 adults as a main meal. Preparation time is about 20 minutes and cooking time is about 30 minutes.
We prepare this recipe in our stainless steel wok. It will make about 8 servings and is great as leftovers, so you don't have to cook every day. If you want a smaller amount, cut the recipe in half.
We begin by washing and peeling the vegetables and placing the pasta pot on the stove top with water.
While the pasta water is heating, we place the frozen green beans in the wok and shred the other veggies in our food processor, and place them in the wok. Add the ginger and hot sauce to the veggies in the wok.
When the pasta water boils, add the pasta and follow the directions on the package.
Add a little water (1/4 cup) to the wok to aid in stir frying, and stir fry until the veggies are tender. A little additional water may be added if necessary
While the veggies and pasta are cooking, place about 3/4 cup of water in the container of a high speed blender, add the dates, sesame seeds, soy sauce or Bragg aminos, smoke flavor, and corn starch, and blend at high speed until the contents are smooth.
When the veggies and pasta are cooked, drain the pasta and add the pasta to the wok with the contents of the blender container. Stir fry all the ingredients together for a couple of minutes.
Serve and enjoy!
