Pineapple kale green smoothie is a delicious and healthful vegan recipe that's a wonderful way to begin the day, or to have at any other time. Preparation time is about 15-20 minutes if you are using fresh greens.
We each have three 12-oz. glasses of a vegan green smoothie for our breakfast (or any other time of the day), so we usually completely fill the large container of our Vita-Mix high speed blender. If you wish to make a smaller amount, cut the recipe in half.
Wash and clean the pineapple, remove the leaf end, and cut in half lengthwise and then slice across each half in 3/4 inch think slices and slice off the rind, and cut the pineapple into chunks and place half of them in the bottom of the blender container. Peel 2 bananas and form into a "nest" above the pineapple chunks, and place the stevia and flaxseed in the nest.
Wash and clean the fresh kale, and add to the blender container until it is nearly full with the fresh kale, or add the frozen or cooked greens, and add a cup of water.
Add the ice, cover, and run the blender at high speed until the ingredients are smooth, using the tamper as required.
While the blender is still running at high speed, add any remaining greens, if any, extra pineapple and bananas, and/or ice and water through the hole in the cover of the blender cover to fill the container and achieve the desired consistency of the smoothie.
Pour into glasses and serve with a straw. Enjoy!
