Thats right! A fruit pizza makes an excellent dessert or snack or for a party; its also good for breakfast. This is also a larger recipe that makes 16 pieces.
Dough Ingredients:
Place in a dough mixer the following ingredients, in the order listed, and mix for 20 minutes.
4 tsp. dry Yeast
4 cups Whole Wheat Flour
6 tsp. Wheat Gluten
2 Tbsp. Molasses
1 tsp. ground Cardamom
1 1/2 tsp. Cinnamon
2 cups of juice from a #10 can of whole pitted unsweetened Cherries warmed to 125�F (about 2 min. in a microwave on high)
Start mixer, and note consistency of the dough. If it is too loose, sprinkle in a little Oatmeal. If the dough is too dry, add a little more of the juice from the Cherries.
Cherry toping:
Place in a 6-quart lined or glass pot the following ingredients:
1 #10-can unsweetened Cherries with about 1 cup of the juice.
� tsp. ground Cardamom.
1 � tsp. Cinnamon
1 cup Oatmeal
Simmer until thick, stirring occasionally. If topping mix does not completely thicken, sprinkle in some additional Oatmeal. Remove from the heat and cover.
Preparing the Pizza:
Press out the Pizza dough in a clean counter top covered with a flour mixture made of the following:
1 heaping tablespoon Whole Wheat Flour
1 heaping tablespoon Corn Meal
1 tablespoon Sesame Seeds (hulled, unroasted)Transfer the dough to a large pizza pan or cookie sheet lightly sprayed with Oil. Warm the oven to about 100� F. Place the dough on the pan in the oven to rise. When the dough has risen, turn the over up to 400� F on "preheat", and let the dough start its initial baking (about 4 minutes). The top of the dough should be firm.
Remove the dough from the oven and "gently" spoon on the cherry topping. Cover the top with � cup of sliced Almonds, and sprinkle on some Sesame Seeds. If you want the pizza sweeter, sprinkle a layer of brown sugar on top.
Final Baking:
Reset the oven to "bake", and bake at 400� F for approximately 10 minutes. Check occasionally to verify the correct cooking time for your own oven by lifting the corner of the Pizza to check the underside (we suggest the first check at 8 min.
