This deep dish mushroom broccoli pepper pizza is a delicious vegan recipe that will make 12 thick slightly over 4 inch square pieces that will serve 6 adults when served with a large tossed salad. Leftovers can be stored in a covered container in the refrigerator for a few days and warmed in the microwave oven before serving.
We begin by mixing our bread dough in either our bread maker or in our mixer.
If you are grinding your own flour from wheat berries, the flour will be warm, and the water should NOT be preheated.
Place the flour in the mixing bowl or in the bread maker container. Hollow out the center of the flour and add the lecithin, molasses, vitamin C, and ginger. Add about half of the water and the yeast and begin mixing. Add small amounts of water as needed to bring the dough to a springy consistency, and continue mixing. The total kneading time should be approximately 20 minutes.
Lightly flour the inside bottom of the baking pan and remove the pizza dough from the mixer and lightly coat the outside with a little flour for ease in rolling out the dough, adding additional flour dusting as required.
Press or flatten out the dough so it can be rolled with a small rolling pin, transfer the dough to the baking pan, and roll out to the sides and corners, slightly mounding the dough along the sides of the pan. Allow the dough to rise in a warming drawer or in another warm location (about an hour).
While the dough is rising, we cook our pizza sauce in a covered glass bowl in the microwave oven so that it doesn't burn as it's thickening. If you prefer the sauce less spicy, use green bell peppers.
Wash, peel, and dice the onion and place in a covered glass pot or bowl. Peel and dice/crush the garlic and add to the pot. Wash the peppers and remove the stem end. Do not remove the seeds, if you like the sauce "hot"; or remove the seeds, if you want the sauce less spicy. Dice the peppers and add to the pot. Add the oregano.
Place the covered bowl in the microwave oven on "high" for about 5 minutes, or until the onions begin to become translucent, add the crushed tomatoes and continue cooking on "high" in the microwave oven until the sauce thickens.
If cooking on the stove top, sauté the veggies in a little water in the glass pot. After the onions, garlic, and peppers are cooked, add the crushed tomatoes, and simmer on low heat until the sauce thickens, stirring occasionally to prevent the sauce from sticking to the pot.
While the sauce is cooking, wash and clean the mushrooms, broccoli, pepper, and peel the onion for the topping. Slice the mushrooms and pepper, cut the broccoli florets from the stock, and dice the onions.
When the pizza dough has risen, place in a pre-heated conventional oven at 350 degrees F. for 10-15 minutes to firm the dough. Then add a thick topping of sauce and sprinkle on some nutritional yeast, place the mushrooms, broccoli, peppers, and onions on top, and place back in the oven for another 20 minutes.
Slice, serve, and enjoy.
