Spinach Uncheese Pizza

Ingredients

Pizza Topping:
3 lbs. Spinach, fresh or frozen
3 Onions, medium to large size
2 cups Nutritional Yeast, flakes
3 tbsp. Lemon Juice
2 tbsp. Corn Starch
Hot Pepper Sauce, to taste

Pizza Dough
4 cups Whole Wheat Flour
2 tbsp. Lecithin, liquid
4 tbsp. Molasses
4 tsp. Yeast, baking
1/4 tsp. Ginger, ground
1/4 tsp Vitamin C, crystals

Preparation

This recipe will make a large 10" X 16" or two 10" round thick crust pizzas, which we usually cut into 12 pieces. This spinach uncheese pizza will serve 6 adults as a main meal with a salad. (To enlarge the photo of the spinach uncheese pizza, click on the photo or link)

Frozen spinach is easier to use since it avoids the timely washing and cleaning of fresh spinach, and can be defrosting while the dough is being made.

We begin by making the pizza dough. Place the whole wheat flour and the other dough ingredients into the bowl of a mixer or bread maker. (The lecithin, ginger, and vitamin C are used as a dough enhancer to help the dough rise higher and be softer, and they can be eliminated if desired) Add about 1-1/2 cups of water and mix the dough ingredients together, adding a little additional water as needed to achieve a good dough consistency.

After about 20 minutes of kneading, roll out the dough into a lightly floured baking (pizza) pan, and allow it to raise to a least twice its size (an oven warming drawer is great for doing this).

While the dough is raising, make the spinach topping.

Placing the spinach in a large covered baking dish and add peeled, washed and diced onions, cover, and place the dish in the microwave oven and cook on high heat until the onions become semi-translucent mixing occasionally to insure uniform cooking.

While the spinach is cooking, place the cornstarch in a small bowl, add the lemon juice and hot sauce and mix well to make sure the corn starch is uniformly dispersed. When the spinach and onions are cooked, mix the cornstarch mixture again, and add to the spinach with the nutritional yeast, and mix well, cover, and reheat on high for a few minutes to make sure the cornstarch thickens all the liquid in the baking dish. If there is still liquid, add additional cornstarch mixed with a little lemon juice or water, mix well, and reheat if necessary.

When the dough has risen, place in a preheated conventional oven at 350 degrees F. and bake for about 30 minutes so that the top crust is firm to the touch.

Carefully remove the baking (pizza) pan from the oven, and place on a wire rack, and gently spoon on the spinach uncheese topping. Place the pizza back into the oven and bake for another 15 to twenty minutes.

Remove the baked pizza from the oven, and place the pan on a wire rack, and slice the pizza.

Serve with a large tossed salad and enjoy.
