Plantain Date Cream
A Whole Fruit Non-Dairy "Ice Cream"
Ingredients
Plantains, ripe
Dates, pitted

Preparation
Begin by peeling and freezing ripe plantain slices. See ripe plantain. We suggest using one or two plantains to make each serving.
When the plantain slices are frozen, place them in a high speed blender, such as a Vita-Mix. Add about 4 pitted dates per the equivalent of each whole plantain.
Cover blender and run it at high speed, using the tamper to make sure that all the plantain slices and dates are "creamed" together.
Spoon out into serving bowls. If you need to make more than one batch, place the bowls of plantain cream in the freezer until all the other batches of plantain cream are prepared.
