Ingredients

Potato, Sauerkraut, Carrot, and Onion with Smoky Mustard Sauce
3-4 lbs. Potatoes
1 lb. Carrots
1 lb. Onions
1 lb. Sauerkraut (or 15 oz. can)
1/3 cup Mustard, yellow prepared
1/4 tsp. Smoke Flavor

Preparation

Potato, sauerkraut, carrot, and onion with smoky mustard sauce is a delicious vegan recipe for lunch or dinner. It can be made in a large covered ceramic or glass baking dish and in either a microwave or conventional oven. It will serve 4-6 people as a main meal with a salad. Leftovers can be stored in the covered baking dish in the refrigerator for a few days and rewarmed before serving.

Wash and clean the potatoes and remove the eyes and any damaged spots (the skin can be left on). Cut the potatoes into 1/2 inch slices, cut the slices into cubes, and place in the covered baking dish.

Peel the carrot and onions and remove any bad spots. Thinly slice the carrots into the baking dish; dice the onions and add to the other ingredients in the baking dish.

Add the mustard and smoke flavor, and mix well.

Cover the baking dish and bake in the oven until the veggies are tender, mixing every 10 minutes.

Serve and enjoy!
