Raisin Almond Rice with Allspice

Ingredients

2 cups - Brown Rice, uncooked
4 cups Water
1 cup Raisins
1/2 cup Almonds, sliced or split
1 Onion, medium size
1 stalk Celery, large
1/4 cup Parsley, fresh chopped
1/2 tsp. Allspice, ground
1/2 tsp. Black Pepper or a little hot Red Pepper

Preparation

Place the water in a large covered glass pot on the stove top, and bring to boil on high setting.  While the water is heating, peel and dice the onion.  Wash and dice the celery and parsley.

When the water begins to boil, add all the ingredients and mix.  Cover the pot, lower the heat to "low" and simmer until all the water is absorbed.  Do not remix. 

When the water is absorbed, turn off the heat, serve and enjoy!
