Sweet potato flat bread is a delicious vegan recipe treat that is great for breakfast, for making sandwiches, or for a snack any time of the day. This recipe makes 4 to 6 round pieces of flat bread, or enough for 2 to 3 sandwiches. Preparation time is about 15 minutes, total, and baking time is about 3 minutes for each piece in a microwave oven.
Begin by washing and cleaning the sweet potatoes, punching a few holes in them to allow the steam to escape, and placing them in the microwave oven for about 5 minutes.
While the sweet potatoes are cooking, measure out the dry ingredients into a bowl and mix well.
When the sweet potatoes are cooked, remove the skin, and place the potato in the container of a high speed blender with 2/3 cup or water. Cover the container and run the blender at high speed until the contents are thoroughly blended together.
Add the contents of the blender container to the dry ingredients and mix well. If the mixture is to stiff, rinse out the blender container with a little water and add to the mixture in the bowl, and mix until the contents are totally moistened and smooth.
Spoon out the dough onto 4 or 6 five inch diameter saucers or plates, bake each piece in the microwave oven for about 2.5 minutes and carefully run a flat metal spatula around and under the flat bread until you are able to lift it and turn it over, and then bake again for 1/2 minute. Microwave ovens are not the same, so adjust your times to make the flat breads to the texture you desire.
