This is a relatively quick and easy recipe that can be made on the stovetop, microwave, or in a wok. It is great as a main dish, side dish, or as a tortilla or pita stuffing. It will make 6-12 servings depending on how it is served.
Begin by washing, cleaning, and peeling the fresh vegetables, as needed.
Coarsely shred the cabbage and onions, and finely shred the carrots, and place in the cooking vessel.
If desired, crush the garlic and add to the shredded veggies. Add the ginger and hot pepper, mix well and cook until tender. If you are stir frying in a wok or on the stovetop, stir fry in a little water. If cooking in the microwave oven, mix well after 10 minutes, and then every 5 minutes until cooked.
While the veggies are cooking, wash and core the apples, cut into pieces and place in the container of a high speed blender. Add the cider vinegar, soy sauce and corn starch, cover, and blend at high speed until the contents are smooth.
When the veggies are cooked, add the sauce and mix well until the sauce thickens, and immediately remove from the heat.
Serve and enjoy!
