White Nectarine Vinaigrette Dressing
4 cups White Nectarines, ripe
1 cup Water, cold
1/2 cup Apple Cider Vinegar
1/2 tsp. Guar Gum
1/16 - 1/8 tsp. Stevia Extract, white powder

Preparation

White nectarine vinaigrette dressing is a delightful sweet and sour treat for any mixed greens and veggie salad, and the aromatic aroma of the white nectarine highlights this dressing's appeal. Leftovers can be stored in a covered container in the refrigerator for several days.

Begin by placing the vinegar and water in the container of a high speed blender.

Wash, clean, and remove the pits from the ripe white nectarines, and place the pieces in the blender container until the total volume measures 5-1/2 cups.

Add the stevia and guar gum, cover, and run the blender at high speed until the contents are smooth, then reduce the speed and continue churning until the mixture begins to thicken (about 2-3 minutes).
