Butter Bean And Basil Salad
Serves 6
3 cans butter beans, rinsed
2 cloves garlic, minced
� cup chopped basil
16 ounces frozen corn, thawed
1 box grape tomatoes, halved
1 small red onion, chopped
Add juice & zest of 1 lemon
� cup balsamic vinegarMix and serve over bed of spinach or romaine.
