Roasted Corn And Black Bean Salad
Serves 4
2 cans black beans, rinsed
1 16 oz pack frozen corn
2 Vidalia onions, sliced thin & halved
3 medium tomatoes, diced
1 bunch cilantro, chopped
6 tbsp balsamic vinegar
Romaine lettucePut beans in bowl. Spread corn on sheet and broil until turning brown, add to beans.
Spread onions on sheet and broil until turning brown, add to beans and corn
Add tomatoes,and cilantro and mix
