Potato Salad
From "Eating, McDougall Style"
Servings: 12
Preparation time: 40 minutes (Minus cooking and chilling)
8 large red potatoes, scrubbed and quartered
3 tomatoes, diced
1 green or red bell pepper, chopped
� Bermuda onion, or 5 scallions, chopped
1 cucumber, chopped
1 handful fresh parsley, chopped
1 handful alfalfa sprouts (optional)
2 celery stalks, chopped
2 - 3 carrots, grated
Mayonnaise, spicy, egg/oil free
lemon wedges (optional)
chives (optional)
Cook potatoes until tender but still firm. Drain and chop. Place all the vegetables into a large bowl. Combine with all the mayonnaise from one batch and mix well. Chill at least 2 hours and serve with lemon wedges or chives.
