The various food processing companies may use different methods and equipment so can never be absolutely sure what they use, however, we are very familiar with the food service and processing industry, and have never seen any large aluminum cooking vessels; all the ones we've seen are made out of stainless steel.
We also doubt any company would use aluminum with tomatoes since, as you say, tomatoes are acid and the aluminum could react and turn the tomatoes black.
