Bread - Focaccia
Beans, Onions, Olives and Jalape�o Peppers - Tex-Mex Style

makes about 8 slices

Bread Ingredients
3 tsp. Yeast
3 cups Whole Wheat Flour
1 tsp. Soya Lecithin
3 tbsp. Molasses
1-1/2 cups Water

Topping Ingredients
1 Sweet Onion, medium size, coarsely diced
1-1/2 tbsp. Garlic, minced
2 tbsp. Olive Oil, optional
1-15 oz. can Red Kidney Beans, unsweetened, drained

1-1/2 tsp. Cumin Seed, powdered
1-1/2 tsp. Chili Powder
3/4 tsp. Sweet Basil Leaves, dried
15 Black Olives, pitted,  sliced in rings

Pickled Jalape�o Pepper Slices

Preparation

Place all of the bread ingredients in a dough mixer and kneed for about 20 minutes.  We find that adding about 3/4 of the water in the beginning of the kneading process is best, and then add the remaining water as the dough stiffens.

While the dough is mixing saut� the Onions and Garlic in the Olive Oil, Or, microwave the Onions and Garlic, without oil until the onions become slightly translucent.  Remove from the heat and add the drained Red Kidney Beans, Cumin, Chili Powder and Basil. Mix well.

When the dough is thoroughly kneaded, remove from the mixer and press out on a clean counter top or dough sheet covered with a thin layer of Corn Meal or Whole Wheat Flour (we prefer Corn Meal) to keep it from sticking. Turn the dough over several times as it is being pressed out to the desired diameter of about 14 inches.  Place the dough on a cookie sheet or 16" Pizza Stone (we prefer the Pizza Stone) covered with a thin layer of Corn Meal.

Spread the Onion, Garlic and Bean mixture evenly over the top of the dough, leaving about 3/4 inch of dough exposed around the edge.  Place the sliced Olives evenly over the surface, and then add some Pickled Jalape�o Slices (we use about 24) even placed over the surface.

Place the Focaccia in the oven set on warm (100 to 110 degrees F.) to allow the dough to rise.  When the dough has doubles in size (about 30 minutes) raise the oven temperature to 350 degrees F. and bake for 25-30 minutes. 

Remove the Focaccia from the oven and cut into 8 wedges with a pizza cutter or knife.
