Sweet and Sour Red Cabbage
(Great by itself or as a stuffing for a tortilla as pictured below)
Ingredients
8 cups Red Cabbage, shredded
2 cups Carrots, shredded
1 cup Onions, shredded
2 tbsp. Garlic, minced
2 tsp. Ginger, powdered
1/4 tsp. Cayenne Pepper
8 oz. Prunes or 4 oz. Prunes and 4 oz. Nectarines, dried
1/2 cup Apple Juice
1/4 cup Vinegar
2 tbsp. Soy Sauce
2 tbsp. Corn Starch
Preparation
Place the shredded Red Cabbage, Carrots, Onions, and the Garlic, Ginger and Cayenne Pepper in a wok for stir frying or in a covered glass baking dish for cooking in a microwave oven. Cook until the vegetables begin to get tender.
Add the remaining ingredients to a blender, cover and puree at high speed until smooth. Add to the cooked vegetables and mix together and continue cooking until the Corn Starch is dissolved and thickens the liquid portion.
Serve by itself or as a tortilla or Chinese rice pancake stuffing.
