Ingredients

Candied Sweet Potatoes, Apples, and Plantains
3 lbs. Sweet Potatoes
3 Apples, large
4 Plantains OR 6 Saba Cooking Bananas
1/4 cup Molasses, unsulfured or Barbados
1 tsp. Cinnamon, ground

Preparation

Candied Sweet Potatoes, Apples, and Plantains is a delicious vegan recipe will make 10-12 side dish servings, and it is great with any festive meal. This recipe can be made in either a microwave oven or in a conventional oven at 350 degrees F.

Wash and peel the sweet potatoes, cut lengthwise into strips not exceeding 1" in width. Cut each strip into 1/4" slices and place them in a large covered baking dish.

Wash the apples, cut into quarters, remove the stem and core, cut into slices, and cut each slice into bite size pieces, and place in the baking dish.

Wash and peel the plantains or saba bananas, cut into slices and place in the baking dish.

Add the molasses and cinnamon to the ingredients in the baking dish, mix well, cover, and bake until the potatoes are tender, mixing about every 10 minutes.

Serve and enjoy!
