Swiss Chard with Olives
and
Brown Rice
- Hellenic Style -
Ingredients
1 Onion, large, diced
2-3 lbs. Swiss Chard, chopped, fresh or frozen
1 6-oz. can Olives, ripe, pitted, sliced
1/2 tbsp. Olive Oil, extra virgin
Black Pepper, ground
OR
Hot Red Pepper Sauce (to taste)
2 cups Brown Rice
cooked in 3-3/4 cups of water

Preparation
We usually prepare this recipe by cooking the rice in a glass pot on the stove top, and cooking the onions and Swiss chard in a large baking dish in a microwave oven set on "high"; but these vegetable ingredients may also be baked in a conventional oven set at 350� F. We also prefer coarsely chopping the veggies in a food processor (photo-right).
To keep the preparation time to a minimum, begin by putting the water in a glass pot (photo-left) on the stove top and turn on the heat to high.
Wash, peel and chop the onions and place them in the large baking dish (photo-right). Add the extra virgin olive oil and ground black pepper (or a little hot red pepper sauce could be used instead - our innovation) and mix thoroughly. Cover the baking dish and place in the oven until the onions begin to become translucent. In our microwave oven this takes about 5 minutes.
When the water in the pot begins to boil, add the rice, cover the pot, and lower the heat to simmer. Continue cooking until all the water is absorbed.
Wash and clean the Swiss chard, chop or finely cut, and add to the baking dish, on top of the cooked onions. Do not mix. Cover the baking dish and place back in the oven and heat until the Swiss chard begin to wilt. In our microwave this takes about five minutes.
Remove the baking dish and mix well, place the cover back on the baking dish and continue cooking until the Swiss Chard is tender.
By this time the rice should be cooked, too. When it is, add the rice and sliced ripe olives to the onion and Swiss chard in the baking dish and mix all the ingredients together. Place the covered baking dish back in the oven and cook for another 10 minutes to blend the flavors.
Remove from the oven and serve.
