Swiss Chard, Red with Brown and Wild Rice (Greek Style) is a relatively easy to prepare vegan recipe that will serve 4-6 adults as a main meal. We usually prepare this recipe by cooking the rice in a glass pot on the stove top, and cooking the onions and Swiss chard in a wok or in a large baking dish in a microwave oven set on "high"; but these vegetable ingredients may also be baked in a conventional oven set at 350º F. We also prefer coarsely chopping the veggies in a food processor.
To keep the preparation time to a minimum, begin by putting 4 cups of cold water in a glass pot on the stove top and turn on the heat to high.
While the water is heating, wash, peel and chop the onions and place them in the the wok or large baking dish. Add the ground black pepper (or a little hot red pepper sauce could be used instead - our innovation) and mix thoroughly. Cover the baking dish and place in the oven until the onions begin to become translucent. In our microwave oven this takes about 5 minutes. If cooking in a wok, stir-fry in a little water.
When the water in the pot begins to boil, add the brown and wild rice, cover the pot, and lower the heat to simmer. Continue cooking until all the water is absorbed.
Wash and clean the red Swiss chard, chop or finely cut, and add to the wok or baking dish, on top of the cooked onions. Do not mix. Cover the baking dish and place back in the oven and heat until the red Swiss chard begins to wilt. In our microwave this takes about five to ten minutes. In a wok, stir-fry with the onions.
Remove the baking dish and mix well, place the cover back on the baking dish and continue cooking until the Swiss chard are tender. Add the extra virgin olive oil and mix well.
By this time the rice should be cooked, too. When it is, add the rice to the onion and red Swiss chard in the baking dish and mix all the ingredients together. Place the covered baking dish back in the oven and cook for another 5 minutes to blend the flavors.
Remove from the oven and serve.
