Green smoothie: banana blueberry collards peach is a delightful vegan recipe that makes about 54 ounces of smoothie, which takes about 15 minutes to prepare. We suggest that you only make as much as you will consume, as it does not store well.
We each have three 12-oz. glasses of a vegan green smoothie for our breakfast (or any other time of the day), so we usually completely fill the large container of our Vita-Mix high speed blender. If you wish to make a smaller amount, cut the recipe in half.
Wash, clean, and remove the pits from 3 peaches, cut into quarters and place in the bottom of the blender container
Peel 2 of the bananas, break into pieces, and place on top of the peaches in the blender container, forming a nest to hold the flaxseed so that the seeds won't touch the walls of the container, and add the flaxseed.
Wash and clean the fresh blueberries, and add the fresh or frozen blueberries to the blender container.
Wash and clean the fresh collard greens, and add the fresh, frozen or cooked collards to the blender container, and add one or two cups of cold water to aid in the mixing. If you cannot get all the fresh collard greens into the container, add the remaining collard greens after the initial running of the blender.
Cover the container, and run the blender at high speed until the ingredients are smooth, using the tamper as required.
While the blender is still running at high speed, add any remaining collard greens, extra bananas, peaches, ice, or water through the hole in the cover to fill the container and achieve the desired temperature and consistency of the smoothie.
Pour into glasses and serve with a straw. Enjoy!
