(Eggplant, Thai Green) The Thai
green eggplant is a small, round to elongated eggplant that
is native to Southeast Asia and is a staple of Thai and Southeast Asian
cuisines. This is more like the fatter elongated variety. Thai eggplants thrive
in tropical climates and have a tender skin and delicate flavor. Of the many
varietals, Thai green eggplant is the most popular and the one most likely found
at specialty Asian markets. We bought ours at Touch of Dutch Farm in Richland
Center, Wisconsin. The only nutritional information we could find says that Thai
eggplants contain dietary fiber, potassium, manganese, and antioxidants.
