(Ginger) Ginger is a tuber that is consumed whole as a delicacy, medicine, or
spice. It is the rhizome of the plant Zingiber officinale. Fresh ginger can be
substituted for ground ginger at a ratio of 6 to 1 (1/4 cup ginger root = 2 tsp.
ground ginger), although the flavors of fresh and dried ginger are somewhat
different. Ginger is native to Southern Asia and has long been a staple addition
to Asian cuisines, but its use has spread around the world. The characteristic
odor and flavor of ginger is caused by a mixture of zingerone, shogaols and
gingerols, volatile oils that compose one to three percent of the weight of
fresh ginger, mature ginger having the higher percentage. See the nutritional
