Russian Kale

Russian Kale
(Russian Kale) This is a bunch of Russian kale direct from the farmers market (before washing and cleaning). The leaves are softer than the curly kale, but has a slightly stronger flavor, somewhat like a mild mustard green. It can be added raw to green smoothies, and salads, or cooked in a variety of recipes. There is also a red variety of Russian kale. We have not seen Russian kale for sale in the produce section of regular supermarkets. We could not find any specific nutritional information for Russian kale, but the literature we saw says that some sources say it has less calcium, and perhaps a little oxalic acid (which is also in spinach).
