Polenta (Corn Grits) Polenta or corn grits are a form of cracked corn that are
cooked in 3 times the amount of water. The resulting cooked polenta is a
traditional staple of Northern Italy and the Southern American States. It is
eaten as a cereal, a side dish with or without a sauce, and in other recipes.
Cooking time is very similar to that of rice.
