Lentil rice plate bake is a quick and easy vegan recipe for one or two people, if you are using a leftover lentil rice loaf mix. It can be served and eaten from the plate or be the main filling of a sandwich.
Press out the lentil rice loaf mix to form a 3/8 inch (1 cm.) thick circle the size of the center of a microwaveable plate, and spread on some of your favorite barbeque sauce.
Peel an onion and slice enough to place on top of the barbeque sauce.
Bake in a microwave oven on high until the onions become semi-translucent.
For an added treat, sprinkle on a little nutritional yeast before serving.
