Ingredients

Mayocoba Bean Soup
1 lb. Mayocoba Beans
1 Jalapeno Pepper ground in 6 to 7 cups water
1 6-oz. can Tomato Paste
12 oz. Corn, frozen
12 oz. Peas, frozen
2 Onions
2 ribs Celery
4 Carrots
2 tsp. Basil, dried leaves
2 tsp. Garlic Powder
2 tsp. Oregano, dried leaves

Preparation

Mayocoba Bean Soup is a spicy bean and vegetable soup that we prepare in our pressure cooker. It takes about 15 minutes to prepare and about 2 hours to cook including hot cooldown time in the pressure cooker, in which time you can do other things.

Place the washed beans in the container of at least a 10 cup pressure cooker.

Place the washed jalapeno pepper with the stem removed in a blender container with 6 cups of water, cover, and run the blender at high speed until the pepper is completely ground, and add the contents to the pressure cooker container. Rinse out the blender container with a little water into the pressure cooker container, if desired.

Wash the celery and peel the onions. Dice or thinly slice them and add to the cooking container.

Add the tomato paste, frozen veggies, and seasonings to the container. Place the container in the pressure cooker with the lid secured. Set the timer for "beans", and let it cook and cool down naturally. Allow the pressure cooker to keep the soup warm for at least another hour to help give the beans a more creamy texture.

Serve and Enjoy.
