Pizza - Pepper, Olive and Onion

Ingredients

Pizza Dough
Pizza Sauce

Tofu Layer

1 lb Tofu, firm, block
1/2 cup Lemon Juice
1/2 cup Nutritional Yeast
1/2 tsp. Salt (optional)
2 tbsp. Corn Starch

Topping

Green, Red, Yellow Bell Peppers
Onions
1 - 6-oz. can Black Olives, sliced

Preparation

Follow our Pizza Dough and Pizza Sauce recipes or use your own.  The pizza dough recipe we selected is one made with spelt and barley flour, but a dough made with whole wheat flour will work just as well.

While the pizza dough is rising and the pizza sauce is cooking, wash the peppers and peel the onions.  Slice and cut the peppers and onions to the desired size.  We use a combined weight of approximately 1 pound (1/2 kilogram of peppers and onions.  Precook the pepper and onion pieces in a microwave oven or on the stove top until the onions begin to become translucent.  Set aside.

Open the can of olives and drain off the liquid.  Slice the olives, and set aside

While the untopped pizza dough is baking in the oven, prepare the tofu layer.  Place all the ingredients in a blender and process at high speed until the ingredients are "creamy" smooth.

When the pizza dough is finished pre-baking (about 15 minutes at 400 degrees F.), remove the pizza pan from the oven and set on a wire rack.  As quickly as possible, spread the tofu "cream" on the top surface of the pizza dough with a spatula, working the tofu layer close to the edges.  (To enlarge the photo of the tofu cream layer, click on the photo or link)

Then carefully spoon on the pizza sauce, and gently spread over the top of the tofu layer, being careful not to mix the tofu and sauce layers together.  (To enlarge the photo of the sauce, click on the photo or link.)  Cover the sauce layer with the pepper, onion, and olive pieces.

Immediately place the pizza back in the preheated oven at 400 degrees F. for another 15 minutes.

Remove the baked pizza from the oven, set the pan on a wire rack, and allow to cool for approximately 5 minutes before cutting.  Cut into pieces or slices, as you desire, and serve.  Enjoy! (Photo-left - pizza slice)
