Ingredients

Potato Soup
5+ lbs. Potatoes
1-1/2 lbs. Onions
1-2 tsp. Rosemary, dried leaves (to taste)
1 Jalapano Pepper OR Hot Sauce, Cayenne Pepper, or Crushed Pepper flakes (to taste)

Preparation

Potato soup is a relative easy to prepare spicy vegan recipe that we make in our 6-1/2 qt. slow cooker. It will serve 6-8 adults as a main meal, and takes about 30 minutes to prepare, and cooking time in the slow cooker is about 4 unattended hours.

Bring 4 cups of cold water to a boil in a microwave oven or on the stovetop and add to the slow cooker container and turn the heat to medium.

In the container of a high speed blender, place the peeled and cut onions, rosemary, and pepper, cover, and run the blender on high speed until the contents are creamy smooth, and add to the slow cooker and replace the cover on the contain.

Heat 1 additional cup pf water to boiling in the microwave oven to wash out the blender container into the slow cooker, and mix the contents of the slow cooker.

Peel and dice the potatoes and add to the slow cooker. This should fill the slow cooker container to about an inch from the top, if not, add additional diced potatoes.

If the liguid level does not cover the potatoes, add additional boiling water until the liquid just covers the potatoes and place the cover back on the slow cooker and cook until the potatoes are soft.

The potato starch will thicken the soup when it is fully cooked, so if you desire a thinner soup, add some additional boiling water before serving and mix well.
