Pumpkin stuffed and baked with plantain stuffing is a delightful vegan treat for Thanksgiving or any other festive meal. The stuffed pumpkin makes a beautiful centerpiece for the table. This recipe will serve 8 or more adults. Leftovers can be covered with plastic wrap and stored in the refrigerator for a few days.
Follow the instructions for Stuffed Pumpkin and Plantain Stuffing and stuff the pumpkin with the plantain stuffing.
When the stuffed pumpkin is fully cooked, serve on a platter with the lid (pumpkin stem top) removed. Scoop out some of the stuffing and place on a plate. Then, using the side of the serving spoon, cut out some of the pumpkin flesh, being careful not to cut through the outer rind, and place the pumpkin over the stuffing on the plate. If desired, sprinkle the pumpkin with a little cinnamon.
Enjoy!
The above recipe is in keeping with God's creation intent (Genesis 1:29-31): 'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so. God saw all that he had made, and it was very good.' (NIV) Let no animal suffer or die that we may live!
