Red Potatoes Sauerkraut and Carrots
2 pounds Sauerkraut
5 pounds Red Potatoes
1/2 lb. Carrots
1/2 to 3/4 cup Prepared Mustard
1/4 tsp. Smoke Flavor

Preparation

Red potatoes sauerkraut and carrots is a tasty vegan recipe that will serve about 6 adults as a main meal. It also makes an interesting dish to take to a covered dish supper. Leftovers can be stored in the refrigerator in the covered dish for a few days and warmed up on plates in the microwave oven.

We begin by washing and cleaning the potatoes and peeling the carrots. We leave as much of the red skins on the potatoes as we can, to add color to the recipe. Dice the potatoes into bite sized cubes and place in the covered baking dish. Thinly slice the carrots into the baking dish, add the sauerkraut, mustard, and smoke flavor, and mix well.

Cover the baking dish and place in either a microwave oven on high heat, or in a conventional oven at 350 degrees F. Cook until the potatoes are tender (mix every 10 minutes to insure uniform cooking).

When the potatoes are cooked, remove from the oven, serve and enjoy.
