Rice, peas, and onions (Chinese style) is a delicious (no-fried) fried rice vegan recipe that will serve 6-8 adults as a main meal with a salad. We cook this recipe in either our wok or in a large covered baking dish in our microwave oven. It is also great for leftovers and can be stored in the refrigerator for a few days in the covered baking dish.
We begin by placing the rice pot on the stovetop with 4 cups of water and turning the heat to high until the water boils.
While the water is heating, we measure out the rice, and wash the celery and peel the onions, garlic, and carrots. Slice the carrots, dice the celery and onions, crush the garlic, and place in the covered dish or wok (if cooking in a wok, stir-fry in a little water).
When the rice water begins to boil, add the rice, cover, and lower the heat to simmer until all the water is absorbed into the rice.
Pre-cook the carrots, garlic and onions until the onions begin to get translucent.
Add the peas, ginger, and hot pepper to the pre-cooked veggies and cook until the peas are thoroughly defrosted and hot, mixing as necessary to ensure uniform cooking.
When the veggies are cooked, turn off the heat, add the soy sauce or Bragg Aminos, smoke flavor, and rice, and thoroughly mix into the veggies.
Serve and enjoy.
