Ingredients

Apple Cinnamon Raisin Salad Dressing
2 Apples, medium to large size
1 cup Raisins
1 tsp. Cinnamon, ground
1/2 cup Apple Cider Vinegar
1 Onion, small
1/2 tsp. Guar Gum
1/8 tsp. Stevia Extract, powder (optional for added sweetness)

Preparation

We make this fruity sweet-tart apple cinnamon raisin salad dressing in a blender. It's great on any mixed greens, or fruit and lettuce salads. Leftovers can be stored in the refrigerator in a tightly covered container for a few days.

Wash, clean, and remove the cores from the apples, and put the apple pieces into the blender container.

Peel and wash the onion, cut into quarters and add to the blender container.

Add the other ingredients to the blender container. We suggest adding only 1/4 tsp. of guar gum in the beginning so you can achieve the desired thickness.

Cover the container and run the blender at high speed until the contents are smooth; then, reduce the speed to medium or low until the dressing begins to thicken (1-2 minutes). If the dressing is thinner than desired, stop the blender, add the additional guar gum, replace the cover, and run the blender for another 1-2 minutes.

Serve and enjoy!
