Papaya Seed Salad Dressing
Ingredients
1 cup Lemon Juice
1 cup Water
1 Onion, medium
1/2 cup Papaya Seeds, fresh
2 tbsp. Olive Oil, extra virgin
1 tsp, Mustard Seed, dry, ground
1 tsp Guar Gum
1/8 tsp. Stevia Extract, dry, white
Salt (optional to taste)

Preparation
Papaya seeds have a spicy, "black pepper-like" flavor. If you prefer a less spicy salad dressing, use fewer papaya seeds. (To enlarge the photo of the papaya with seeds, click on the photo or link)
Wash and peel the onion. Cut in pieces and place in the container of a high speed blender.
Add the other ingredients to the blender and mix thoroughly until the dressing becomes thick and creamy (about 2 minutes).
