Ingredients

Peach Balsamic Vinaigrette Salad Dressing
3 cups Peaches, ripe, pitted
1 cup Water
1/2 cup Balsamic Vinegar
1/2 tsp. Guar Gum
1/8 tsp. Stevia Extract (adjust to taste)

Preparation

Peach balsamic vinaigrette salad dressing is a delightful treat for any mixed greens and vegetable salad. It takes only about 10 minutes to prepare, and will make about 4 cups of salad dressing that can be stored in a tightly covered container in the refrigerator for several days.

Wash, clean and remove the pits from the soft ripe peaches (leave the skins on), and place in the container of a high-speed blender.

Add the other ingredients to the blender container.  Be careful with the amount of stevia; it is extremely sweet and should be used sparingly.  Additional stevia can always be added, if needed, and blended again. You can always use a different sweetener, if desired.

Place the lid on the blender container, and run the blender at high speed until all the ingredients are creamy smooth, then lower the speed until the contents thicken (about 2 minutes).  Stop the blender, remove the lid and taste the dressing for sweetness and, if necessary, add a little more stevia, cover and remix.

Serve and enjoy!
