Sandwiches:
Tortilla with Tex-Mex Beans, Grains and Porcini Mushrooms
Preparation
Place a warmed Whole Wheat Tortilla on a plate.
Place some shredded lettuce, or some Tossed Salad, on the Tortilla in a row, much like a large minute hand on a clock, and extend it so it runs about 2/3 of the way across the Tortilla.
Place some Salsa (the kind you like) on top of the lettuce.
It you like things spicy, you may also want to add a few Pickled Jalapena Slices.
Now place the Tex-Mex Beans, Grains and Porcini Mushrooms on top of the other ingredients.
We like to use a fork to assist us in rolling the Tortilla by lifting one side and using the fork to compress the ingredients together so that it will be easier to wrap. Push up any ingredients from the bottom 2 inches of the Tortilla. Pull the side you have been holding over the stuffing and bring the other side over it. Then compress the upper side of the bottom of the Tortilla into the stuffing and fold up the lower portion to form a "pocket". It is now ready to eat. When lifting and eating the Tortilla, it is best to hold one hand on the "flap" side and the other hand over the bottom to keep the Tortilla from opening while you eat it, or when you get some practice, you can do it all with one hand..
If you have never made a Tortilla before, it may take a little practice to learn how much of the ingredients to put into the tortilla and still be able to wrap it properly. It should be full, but closed on the side and bottom.
