Lentil Soup

Ingredients

1 pound Lentils, brown
6 cups Water
1 – 6 ounce can Tomato Paste
1 Onion, medium, diced
3-4 cloves Garlic, crushed or minced
4-5 Bay Leaves
(Hot Sauce or Cayenne Pepper, to taste, optional)

Preparation

Since lentils do not take as long to soften as beans, this soup may be started in the morning in a crock-pot (slow cooker), or the night before.

Rinse lentils (removing any extraneous matter) and add preheated water. We heat the water in a microwave oven before pouring over the lentils in the crock-pot. Add bay leaves. If cooking overnight, turn the crock-pot setting to low. In the morning turn setting to high; add onion, garlic and tomato paste. Add more hot water, if needed. Cook until soft.

If cooking on the stovetop, add all ingredients at the same time and cook until the lentils are soft.

If desired, a little hot sauce or cayenne pepper may be added before cooking is completed. Amount of water needed will vary according to your preference of soup thickness. We always pre-heat any additional water added to the cooking soup.

Note: This is Mary’s all-time favorite soup. The addition of hot sauce or cayenne is a fairly recent idea of Frank’s. This soup may be refrigerated for at least three days. It is nutritious, as well as delicious!
