Debra's Potato Soup

This is an easy recipe that takes no time at all once you've prepared all of the ingredients.  Actual cooking time is, give or take, about 30 minutes.  You need a 6-8 quart soup pot (the recipe makes approx. 5 quarts) and a blender.

Ingredients:

1 tsp. Sea Salt
1 tsp. Pepper, fresh ground black (adjust quantity to taste)
1/4 - 1/2 tsp. Celery Seed (it's strong so don't overdo - unless you love the taste)
8 cups water
2-3 tbsp. Vegit All-Purpose Seasoning*
8-9 Garlic, cloves, minced (more or less to taste) - I LOVE IT and it's good for you!
6 Potatoes, medium to large with skins (remember your vitamins) - cut into 1/2 inch cubes
4 Potatoes prepared as described below.

5 Onions, medium sized, sliced into 1/2 inch chunks and separated (use your favorites)
1 lb. Carrots - cut diagonally in slender/medium slices (it's pretty this way)
4 stalks (large) Celery - cut diagonally in slender/medium slices (again, pretty)
10 oz. Corn, frozen or fresh from the cob
8 oz Mushrooms, fresh sliced (I use button mushrooms-others are fine)
8 oz Soy Milk - optional

Preparation:

Place the water in the pot and place on stove top.  As water is coming to a boil add Vegit Seasoning, Sea Salt, ground Pepper, Celery Seed and minced Garlic.  Add, in order, sliced Carrots (they take a little longer to cook) and cook approx. 5 minutes, sliced Celery, 6 cubed Potatoes, Corn, sliced Onions and sliced Mushrooms (definitely last).  Cook until vegetables are semi-tender.

THE SECRET:

Take remaining 4 cubed potatoes and get out your blender.  You can either use a small amount of soy milk or water in the blender first and then start adding cubed potatoes.   Blend until smooth.  Pour blended potatoes into soup and watch it magically thicken up.  Voila -- no dairy!  Good old good-for-you STARCH!  I always put the remainder of my soy milk into the soup as well but it's not necessary.  After adding blended potatoes, let cook about 5 minutes or longer and serve.  Mmm, mmm, good.  Campbell's couldn't have done any better!  All of your carnivorous friends will love it.

SERVING IDEA:  Sprinkle with a few croutons and serve with home made corn bread!

*Vegit All-Purpose Seasoning is a Gaylord Hauser product and is made by: Modern Products, Inc. Milwaukee, WI  53209.  You can find Vegit in most health food stores, natural food stores and diet departments in grocery stores.  The ingredients in Vegit are: Yeast, kelp, toasted onion, dill seed, ripe white pepper, celery, parsley, mushroom powder, orange and lemon peal, oregano, sweet basil, marjoram, rosemary, thyme, protein from soya beans and papain enzyme from tropical papayas.
