Broiled Tofu - Cajun Style
Ingredients
1 lb. Tofu, cake, firm or
extra-firm
Cajun Seasoning, prepared
Preparation
Open the package of tofu and pour off the water. Place the tofu cake or block on a plate and cut into 10 equally thick pieces (across the width). Sprinkle prepared Cajun seasoning on the surface of each slice. (Cajun seasoning is quite spicy, so the quantity used should be according to individual taste.) With the seasoned side down, place the slices of tofu on a lightly oiled broiling pan. Sprinkle additional Cajun seasoning on the upper surface of the tofu slices.
Broil the tofu until it becomes slightly browned and the excess moisture from the tofu has evaporated. We prefer to use our toaster oven. We set the heat setting on "broil" and also push down the "toast" lever so that both the upper and lower heating elements are on. We have found that about three "toast" cycles produce the desired effect.
These broiled Cajun style tofu slices are great by themselves or in a sandwich with lettuce and tomato.
