The days of the veggie-hating kid are going away as young people turn more and more to animal-free lifestyle for a myriad of reasons. The diversity of their produce-repertoire really impressed me and continues to do so.

It always provides me with a great deal of hope seeing young people embracing the veg lifestyle. A couple of years ago we shared an interview with a young vegan baker named Christopher Chernoff. Christopher, now 13, has recently been featured in a new cookbook all about young cooks and chefs: FutureChefs: Recipes by Tomorrow’s Cooks Across the Nation and the World. Though this is is not a veg cookbook, there are lots of vegan and vegetarian options, and we love seeing support for young vegans in a book like this one!

Says author Ramin Ganeshram: “In the two years that I was working on this book, one thing jumped out at me over and over: How savvy today’s kids are on issues of sustainability, food ethics, and animal welfare. The days of the veggie-hating kid are going away as young people turn more and more to animal-free lifestyle for a myriad of reasons. The diversity of their produce-repertoire really impressed me and continues to do so.”

Christopher says he is proud to have been asked to be part of the book. “It’s inspiring to look through the book and see the other recipes and stories by other kids,” he says. In the last two years, Chris’s love for baking hasn’t dwindled – he is now the official family birthday cake maker! Pictured below is the cake he made for his mom’s birthday this year.

He also still likes to cook and help his mom and dad out in the kitchen. This dish, one of those he contributed to FutureChefs, is becoming a family favorite in the Chernoff household, especially for the holidays.
