Preparation
Dried chestnuts double in size when they boiled, therefore, select the quantity of dried chestnuts you wish to boil based on the amount you wish to have when cooked. If we're eating them as a snack, we usually use 1/4 cup of dried chestnuts per person.
If we are making a small quantity, they can be made in the glass measuring cup that we use to measure the quantities, and cooked in the microwave oven in the cup. Larger quantities can be made in the microwave oven in a covered dish or in a pot on the stovetop.
Measure the quantity of dried chestnuts you wish to cook; wash them under slowly running cold tap water, and place the drained chestnuts in a microwaveable dish, or in a pot for cooking on a stovetop.
Add cold water to a depth of slightly over double the depth of the chestnuts. Bring to a boil, turn off the heat, cover, and let stand for about one hour.
Drain and server. Enjoy!

The above recipe is in keeping with God's creation intent (Genesis 1:29-31): 'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so. God saw all that he had made, and it was very good.' (NIV) Let no animal suffer or die that we may live!
