Fruit Smoothie with Prickly Pear, Apple, Banana and Clementine
Ingredients
1 Prickly Pear
2 Apples, large, sweet
4-6 Bananas
4-6 Clementines
or
2-3 Navel Oranges
4 tbsp. Flax Seed (optional)
12 oz. Ice

Preparation
This recipe is best prepared in a high-powered blender such as a Vita-Mix. If a smaller blender is used, we suggest that the recipe be cut in half for each batch.
It is also best to refrigerate the fruit several hours before preparing the fruit smoothie. To make the smoothie even colder, the banana could be peeled, cut into pieces and frozen ahead of time.
Note: Prickly pears have a delicious flavor, but they are also loaded with edible but very hard seeds. We grind the seeds into the smoothie by washing the prickly pear, removing the hard ends, cutting in half, and placing in the blender container with one of the prepared apples and one or two of the peeled bananas (see next paragraph below). Then cover the container and run the blender at high speed until the prickly pear seeds are thoroughly ground. Then add the other ingredients as follows:
Thoroughly wash the apples. Cut into quarters. Remove and discard the core and stem. Place apple sections into the blender. Peel the Clementines or navel oranges and add the sections to the blender. Add the peeled bananas. Add the flax seed.
Add the ice. Cover the blender and run it at "high" until the fruit and ice are thoroughly blended into the smoothie (about 1-minute).
Serve in a tall glass with a straw, and enjoy. A fruit smoothie also makes a great breakfast.
