3-4 lbs. Kale 3-4 Onions, medium size 2 cups Brown Rice cooked in 4 cups Water 3 cups White Beans, precooked or canned 3/4 cup Nutritional Yeast 1/4 cup Lemon Juice Hot Pepper Sauce (to taste) (To enlarge the photo of the kale, onions and rice, click on the photo or link) |
This recipe will make 6-8 servings as a main meal.
The kale and onions can be cooked in either a large covered baking dish in a microwave oven, or in a wok.
We usually begin by placing the rice pot on the stove top with the water, and turning the heat up to high.
While we are waiting for the water to boil, we measure the rice into a bowl, and wash and peel the onions, and wash the kale if we have time, otherwise wash the kale later.
When the water begins to boil, add the rice, cover the pot, lower the heat to simmer, and cook until all the water is absorbed.
Dice the onions, and finely chop the kale, or shred both in a food processor, and put into the baking dish or wok, and add a little hot sauce, if desired.
If cooking in the microwave, cover the baking dish and cook on high for about 10 minutes, and mix well. Continue cooking, and mixing every 5 minutes until the kale and onions are tender and the onions are semi-translucent.
If cooking in a wok, stir-fry the kale and onions in a little water until tender.
In the container of a high speed blender, place the beans, lemon juice, and nutritional yeast, cover, and run the blender at high speed until the mixture is creamy smooth. Use the tamper to aid the blending process as needed.
When the rice, veggies, and un-cheese sauce is ready, add the rice and sauce to the kale and onions and mix all the ingredients together thoroughly. Cook for another few minutes to blend the flavors.
