Casaba Melon

A Casaba melon is great for breakfast, lunch, dessert, or as a snack.  Below are some simple instructions for preparing and enjoying a Casaba melon.

Begin by selecting a good quality Casaba melon.  It is always best to get a vine-ripened Casaba melon, but they will also ripen on the kitchen countertop.  When the Casaba melon is ripe, the melon will develop a faint pleasant aroma, and the rind will yield to slight pressure. Thoroughly wash the Casaba melon and cut in half lengthwise, exposing the seeds. (Casaba melon, split)

Gently scrape out and discard the seeds, and serve the melon "as is" to eat with a spoon, or...  (Casaba melon, half)

Cut the Casaba Melon into slices, and enjoy as finger-food. (Casaba melon, cut)

They will be yours for food.  And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food."
