Wild Blueberry Oven Cakes (Baked Pancakes)


1-1/2 Cups Spelt Flour or Whole Wheat Flour
1/2 Cup Oat Flour (chopped rolled oats)
1 � Tsp Baking Soda
4 Bananas, Ripe
1 Cup Raisins
1 Cup Wild Blueberries, frozen
Apple Juice or Water (as needed)
Pecan Halves

Preheat oven to 350 degrees F.

To prepare the oat flour, place the rolled oats in the container of your blender and run at high speed until the oats are finely chopped (usually takes only a few seconds).

In a large mixing bowl combine flour and baking soda. Add the wild blueberries and mix together to make sure that all the blueberries are coated with the flour mixture.

In a blender container, add bananas and raisins. Run blender at high speed until contents are smooth..

Pour blender contents into dry ingredients and mix well.  Oven cake batter should be a little stiff.  If necessary, add a little apple juice or water to thin the batter.

Spoon and shape batter onto coated baking sheet. Lightly press pecan halves into tops of oven cakes. (See photo.)

Bake oven cakes in 350 degree F. oven for approximately 30 minutes.

Serve with maple syrup or other desired topping, such as banana-date syrup.
