Ingredients

Pinto Bean Curry (Indian Style)
4 cups Pinto Beans, cooked or canned
1 28-oz. can Crushed Tomatoes
1-1/2 cups Onions
1 cup Carrots
6 cloves Garlic
2 tsp. Ginger, ground
2 tsp. Garam Masala
1 tsp. Cumin, ground
1 tsp. Lemon Juice
1/2 tsp.Turmeric, ground
Cayenne Pepper OR Hot Sauce (for added "heat", to taste)
Chopped Cilantro, for garnish before serving
2 cups Brown Basmati Rice cooked in 4 cups Water

Preparation

Pinto bean curry (Indian style) is a delightfully spicy hot vegan recipe that is great served over a bed of brown basmati rice. This recipe will serve 4 adults as a main meal. Preparation and cooking time is about 40 minutes.

Place the rice pot and water on the stovetop and bring the water to a boil.

Place the onions, carrots, and garlic in the container of a high speed blender, and run the blender at high speed until the ingredients are pureed. Transfer the contents to a large covered microwaveable dish.

When the water in the rice pot begins to boil, add the rice, cover, reduce the heat to simmer, and cook until all the water is absorbed into the rice.

Add all the other ingredients to the covered dish and place in the microwave oven on high for about 20-25 minutes, mixing occasionally.

When the rice and the pinto bean curry are cooked, serve the curry over a bed of brown basmati rice, add a garnish of cilantro and enjoy.
